People always go for the yellow and golden looking bananas but have you ever tried eating a green banana? Green bananas have lots of starch (80 percent of the fruit’s dry weight). However, most of the starch is resistant starch. When green bananas ripen, the starch is converted to sugar and this is what makes them sweet. Green bananas have some benefits that yellow or golden bananas don’t have, and they are:

Green bananas improve heart functions. If you have low blood cholesterol, they will help your body prevent the blockage or arteries and capillaries. This function is due to potassium.

Green bananas peels have high antioxidant strength than the ripe ones. Eating unripe banana together with its peels will give you more antioxidant properties as they have more of tannins and chlorophyll.
